Celebrate fresh, vibrant flavors in this hands-on vegetarian Mexican cooking class with Margaret Boyle. Together we’ll prepare two colorful salads, one with protein-rich lentils and creamy avocado, and another bright with cilantro and mint, alongside simple, satisfying quesadillas. This class highlights the joy of working with fresh produce to build everyday meals that are nourishing, flavorful, and easy to share. Along the way, Margaret will share stories of food, history, and memory from Sabor Judío: The Jewish-Mexican Cookbook (UNC Press). Participants will leave with recipes, techniques, and the confidence to create versatile vegetarian dishes at home.
Margaret is Professor of Romance Languages and Literatures and Latin American, Caribbean, and Latinx Studies at Bowdoin College. Her teaching and research explore Hispanic women’s literary and cultural history, health humanities, and food traditions. She is the founder of Multilingual Mainers, an elementary world languages and cultures program.
